I have seen the books for 101 chicken recipes and I confess to being baffled; there is no limit to the number of chicken recipes in this world; so let your imagination starts with the book and then takes off. The cheapest and most nutritious meat around today is chicken. It can be used for just about anything. From the simple elegance of boneless, skinless breast fillets poached in wine with mushrooms, to the hearty ease of barbecued chicken leg quarters, there is just no end of wonderful chicken recipes you can create.
In earlier times, ‘a chicken in every pot,’ was seen as a measure of prosperity. Put a whole chicken in a large pot with water to cover in, bring to a bail, reduce heat, cover the pot and let simmer until the chicken is tender. Then remove the chicken, cool and strain the broth; which can then be frozen for later use. When the chicken has been warmed, remove it from the bones and prepare it using any recipe you like. I really enjoy grilled chicken breast but I was doubtful about how it would taste when I heard about it being offered from a famous chicken restaurant.
Seeing as how their original fried chicken has been a hit for years, I figure their grilled chicken should be just as good. My first anticipation was boneless however bones were present. The taste was bland and it turned out very dry. Boneless and skinless is the only way I buy and prepare chicken breasts, because it is the healthiest. That, however, is the problem with chicken breast. Two easily prepared coatings for skinless chicken are worcestershire sauce with lemon juice and water, about 1/4 cup of each, or keep it real simple and cover with italian salad dressing. Skinless baked chicken is a very health meal, using either coating method will prevent the chicken from drying out and enhance the natural juice flavor.
Even then, it is hard to get good results since the chicken pieces arent a uniform shape–they are thicker in the middle and you really have to make sure that chicken is cooked to a proper temperature. Making a well cooked and juicy chicken breast can be a little typical but once you do it in the correct method, it makes a delicious main course. I am writing to seek some advice from readers. In particular, I am looking for a chicken wing recipe that do not contain any tomato products. I am allergic to tomato sauce,so unfortunately I can not eat buffalo wings or even barbecued wings because they are typicaly made with the product.
Even though they are delicious, I am looking for alternatives as I do get sick if I eat them. I keep an open mind when it comes to food, and I’ll try any flavor, be it sweet, spicy, hot and sour. Anything you can cook, I’m willing to try. Now, I’m not such an experienced chef and would really like to find easy recipes, ones with only a few ingredients, no elaborate procedures, or a pretty short cooking and prep time. Also, I dont particularly like to eat chicken skin, for health reasons primarily, so if you have any recipes and instructions for removing the skin first, that would be best for me.
